Spicy Beef Penne

Total time: About 20 mins

INGREDIENTS:

1. 1 packet Penne LeanPasta
2.1 tbsp vegetable or canola oil
3. 1 small onion, chopped
4. 1 lb ground beef
5. 1 tsp ground cumin, or more to taste
6. 1 tsp chili powder, or more to taste
7. ½ tsp ground oregano
8. Pinch of hot red pepper flakes
9. 1 4-oz can fire-roasted green chiles, drained
10. 16 oz canned chopped tomato
11. 2 cups water
12. ½ tsp kosher salt
13. ½ tsp ground black pepper
14. Store-bought shredded reduced-fat cheese  for topping

HOW TO MAKE:

1. Prepare Penne LeanPasta as per instructions on pack and set aside
2. In a large, deep sauté pan, heat the oil over medium-high heat, and cook the onion for 2 minutes, until translucent.
3. Add the beef and cook, breaking up the pieces, until lightly browned. Add cumin, chili powder, oregano and red pepper flakes, and stir to combine.
4. Add green chiles, canned tomato, water, salt and pepper. Bring to a boil, then reduce heat to simmer.
5. Cook, until mixture has reduced to desired consistency, approximately 20 minutes. (If the sauce gets done before the pasta is cooked, remove the pot from the heat and set it aside; bring back to the heat when you’re ready to add the pasta.)
6. Add the pasta into the sauce, and cook, stirring well, until the pasta and sauce have come together.
7. Pour the pasta into a serving bowl and pass the cheese separately.

Your capellini is ready to serve. BON APPETIT!

Spicy Shrimp Lettuce Cups

INGREDIENTS:

1. 1 packet Capellini Angel Hair LeanPasta
2. 1 pound shrimp
3. 2 tbsp Sriracha sauce
4. 4 cloves garlic, minced
5. 2 tbsp extra-virgin olive oil
6. 1 lettuce, leaves separated
7. 1 red bell pepper, diced
8. 1 carrot, julienned
9. 3 scallions, thinly sliced
10. ¼ cup cilantro
11. ¼ cup soy sauce for drizzling
12. 1 pinch coarse salt and freshly ground pepper

HOW TO MAKE:

1. Prepare Capellini Angel Hair LeanPasta as per instructions on pack and set aside.
2. In a sealable plastic bag, combine the shrimp, 2 tbs. oil, sriracha sauce and garlic. Seal and toss bag to coat the shrimp. Marinate at least 1 hour in the fridge.
3. Heat a non-stick pan over medium-high. Arrange the shrimp in a single layer and sear on one side for 2 minutes; flip and sear 30 more seconds. Remove from pan and set aside.
4. To the pan, add the last tbsp. oil and the diced red bell pepper. Season with salt and pepper and saute for 2 minutes, until crisp-tender. Remove from heat.
5.  In each lettuce cup, add the Capellini Angel Hair LeanPasta. Then add the red pepper, followed by the carrots. Add 3 or 4 shrimp per cup and garnish with scallions and cilantro.
6. Drizzle a little bit of soy sauce into each one.

Your spicy shrimp lettuce cups are ready to serve. BON APPETIT!

Hot and Sweet Spaghetti

The Hot and Sweet Spaghetti with a twist of chicken sausage is an easy recipe, which is best served with basil leaves garnished on top.

INGREDIENTS:

1. 1 packet spaghetti LeanPasta
2. 2 tbsp extra-virgin olive oil, divided
3. 2 links (6 oz) sweet or hot Italian-style chicken sausage, cut into ¼-inch rounds
4. 3 cloves garlic, minced
5. 5 medium assorted bell peppers (about 2 lbs), thinly sliced
6. Hot pepper flakes, to taste
7. Salt and freshly ground pepper, to taste
8. ¼ cup chopped fresh basil leaves, plus whole leaves for garnish

HOW TO MAKE: 

1. Prepare spaghetti LeanPasta as per instructions on pack and set aside.
2. Heat 1 tbsp oil in a skillet over medium-high heat. Add sausage and brown lightly on both sides, about 6 minutes.
3. Transfer cooked sausage to a plate and cover loosely with foil. Wipe out the pan.
4. Add remaining oil to the skillet. Saute garlic over medium-high heat until fragrant, about 30 seconds. Add peppers and saute for about 1 minute.
5. Add hot pepper flakes, and cook until bell peppers start to soften, about 4 minutes.
6. Cover the pan and reduce heat to medium-low. Cook until peppers are soft but not mushy, about 10 to 15 minutes.
7. Season with salt and pepper. Add sausage and basil to pan, and mix gently.
8. Mix the pasta and stir. Garnish with fresh basil.

Prawn Cocktail Salad

Prawn Cocktail Salad is a classic and all time favourite dish. Try this dish along with Fettuccine LeanPasta to try something that you could savour for long.

INGREDIENTS:

1. 1 packet Fettuccine LeanPasta
2. 250g Iceberg Lettuce, shredded
3. 2 tbsp. chopped parsley
4. 2 tbsp. tomato ketchup
5. 2 tbsp. low fat mayonnaise
6. 1 tsp. Worcestershire sauce
7. 2-3 dashes Tabasco sauce to taste
8. 300g cooked peeled prawns, defrosted
9. Pinch of smoked paprika

HOW TO MAKE:

1. Prepare Fettuccine LeanPasta as per instructions on pack and set aside.
2. Toss the iceberg and parsley together and place half in the base of 2 glass serving dishes.
3. Mix together the ketchup, mayonnaise, Worcestershire and Tabasco sauces then stir in the prawns.
4. Spoon half the prawn mixture into the serving dishes and top with the remaining lettuce.
5. Add Angel Hair LeanPasta to the mixture. Finish with the remaining prawns and sprinkle with smoked paprika.

For Alternatives: You could skip adding ketchup to the salad as it has high sugar content.  You could also add sour cream or yogurt on top to give it a more refreshing taste.

Chicken Mushroom Fettuccine is a delicious and creamy pasta with less carbs.

INGREDIENTS:

1. 1 packet 5 string Fettuccine Lean Pasta

2. 200 gms lean chicken breast

3. 80 gms of sliced mushrooms

4. 2 cloves crushed garlic

5. ½ cup parsley leaves

6. ¼ cup parmesan cheese

7. 1 tbsp salted butter

8. ½ cup light cream

9. Olive oil spray

INSTRUCTIONS:

1. Prepare 5 string Fettuccine LeanPasta as per the instructions given on the pack.

2. Place a non-stick pan on a gentle heat and lightly spray with olive oil. Add chicken breast and cook until it is thoroughly cooked. Once cooked, remove it from pan and keep it aside.

3. In a small pan, add butter and melt it over low heat. Add the crushed garlic, mushrooms and cook until fragrant. Add the light cream and then mix Fettuccine to the mixture.

4. Slice the chicken breast into thin stips and add it to the pan. Sprinkle parmesan cheese and parsley and gently toss.

Your chicken mushroom fettuccine is ready to serve. BON APPETIT!

For Alternatives: You could also try this recipe with seasoning of oregano and garlic powder, to give this recipe a new twist.

Angel Hair Capellini with Butter and Parmesan

Angel Hair Capellini with Butter and Parmesan is the easiest recipe to cook in a short time. It tastes amazing and is low in carbs as well.

Total time: Prep to Eat under 5 mins

INGREDIENTS:

1. 1 pack (200 gms) Angel Hair Capellini Lean Pasta
2. 1 tbsp unsalted butter
3. 2 tbsp (10 gms) grated Parmesan cheese
4. ¼ teaspoon salt
5. ¼ teaspoon garlic powder
6. ¼ teaspoon freshly ground black pepper

HOW TO MAKE:

 1. Boil a medium pot of water. Mix salt, garlic powder and black pepper in a small bowl
2. Pour the Angel Hair Capellini Lean Pasta into a colander and rinse the noodles under cold running water for a minute.
3. By now, your water should be boiling. Transfer the capellini to the boiling water, bring back to a boil and boil for 1-2 minutes. While the noodles boil, heat a clean, dry medium-sized skillet over medium-high heat.
4. Pour the cooked noodles back into the colander and drain well. Transfer the capellini to the hot skillet and dry-roast them (adding no oil to the skillet), stirring for 1-2 minutes, until they are dry. This step will help improve the texture, and help to better absorb the sauce.
5. Add the butter to the skillet and thoroughly mix it with the capellini.
6. Add the salt, pepper and garlic powder mixture and mix it evenly into the capellini. Turn the heat off and sprinkle it with Parmesan cheese.

Spicy Red Wine Lean Pasta

INGREDIENTS:

  1. 1 Packet LeanPasta
  2. 1/4 cup extra-virgin olive oil
  3. 3 large cloves garlic, chopped
  4. 1/2 teaspoon of chopped red and green chilli’s
  5. One bottle of your finest selection of red wine (for this recipe we recommend Pinot Noir)
  6. 1 tablespoon tomato paste
  7. 1 tablespoon butter

 

HOW TO MAKE:

  1. Prepare your LeanPasta
  2. In a seperate pan, heat the olive oil over medium-high heat. Add the garlic, chopped red and green chilli’s and 1 teaspoon salt. Cook for around 1 to 2 minutes.
  3. Add your red wine and tomato paste. Bring to a simmer over medium-high heat. Reduce the heat to medium and simmer gently for 3 minutes.
  4. Stir in the butter and 1 teaspoon salt. Gently stir until almost all of the wine thickens enough to coat the pasta (around 1 minute).
  5. Once your ready, toss in your LeanPasta and blend into your sauce.

 

OPTIONAL EXTRAS: Blend with chopped parsley and add on top grated parmesan cheese or for a healthier option use goats cheese.

INGREDIENTS:

  1. 200g LeanPasta
  2. 1 tablespoon all purpose flour
  3. 1 1/2 cups plain low-fat unsweetened yoghurt
  4. 1 tablespoon extra-virgin olive oil
  5. 4 garlic cloves, minced
  6. 1 red chili, minced
  7. 10 ounces baby spinach
  8. Finely grated zest of 2 lemons, plus 1 tablespoon fresh lemon juice
  9. Salt and freshly ground pepper

 

HOW TO MAKE:

  1. Rip open 1 pack of LeanPasta spaghetti and drain the liquid before adding to a bowl of boiling water.
  2. Meanwhile, in a bowl, whisk the yogurt with the flour until smooth. In a large skillet, heat the olive oil. Add the garlic and chili and cook over moderately low heat, stirring occasionally, until fragrant, about 2 minutes. Add the yogurt and bring to a simmer over moderate heat, stirring. Add the spinach by the handful and cook until wilted, stirring. When all of the spinach has been added, stir in the lemon zest and juice and season with salt and pepper.
  3. Drain out all water from your LeanPasta and add your sauce to the LeanPasta spaghetti. Toss well and serve in your finest pasta dish!
  4. Garnish with reduced fat grated cheese and/or chili flakes.
